A fine tequila does not begin in a barrel or with a cocktail garnish. Where the tequila distillation process begins
By law, tequila must be made from Blue Weber agave, known in Spanish as agave azul, and produced within the tequila denomination of origin. Most comes from Jalisco, though limited areas of Guanajuato, Michoacán, Nayarit, and Tamaulipas also qualify. The plant is not a cactus. It is an agave, and it generally needs five to eight years to mature before harvesting.
At harvest, skilled jimadores remove the long leaves to reveal the piña, the dense heart of the plant. A piña can be surprisingly large and heavy, and it holds the inulin that will eventually become fermentable sugar. Maturity matters: agave harvested too early may offer less sugar and a thinner profile, while well-ripened agave can bring deep roasted, earthy, and honeyed notes.
The first major choice is cooking. Traditional brick ovens, called hornos, cook agave slowly with steam, often for many hours or even days. Fermentation: the quiet maker of aroma

Some distilleries use carefully selected commercial yeast for consistency; others rely on house cultures or ambient yeasts for more variation and local character.

A longer fermentation, especially in wood or with more open exposure, may build fruit, spice, savory complexity, or a slightly wild edge. Neither approach wins in every case. The best result depends on the style the producer intends and the care taken at every step.
Before distillation, the fermented liquid is relatively low in alcohol, often around beer strength. It may smell like fresh agave, tropical fruit, bread dough, olives, or a gentle sourness. These are not flaws by default. They are the raw materials the still will concentrate and shape.
How tequila is distilled
The tequila distillation process usually involves two rounds of distillation, though some producers distill three times for a lighter, more refined style. Copper pot stills are prized for their ability to interact with sulfur compounds and preserve a broad, expressive range of flavors. Stainless-steel stills can offer efficiency and consistency, sometimes paired with copper components to retain beneficial contact.
The first distillation produces ordinario, a rougher spirit that has separated from much of the water and solids. The second distillation is the decisive pass. Here, the distiller separates the run into heads, hearts, and tails.
The heads arrive first and may contain sharper, more volatile compounds. What pearling can tell you
When tequila is poured or gently shaken, you may notice a chain of tiny bubbles rising and lingering at the surface. This is known as pearling. It has long been used as a visual clue related to alcohol content and texture, and it is a lively detail to observe during a tasting.
But pearling is not a quality certificate. Bottle proof, temperature, glass shape, and dissolved compounds all affect the bubbles. Consider it a conversation starter, not a verdict. The nose, palate, finish, and transparency of the producer’s practices tell a far more complete story.
Barrel aging changes the conversation
If blanco is the distillery’s pure voice, aging introduces a second speaker: wood. Reposado tequila rests in oak for at least two months and less than one year. Añejo ages for at least one year, while extra añejo spends at least three years in oak. Producers often use previously filled American whiskey barrels, though French oak and other barrel choices appear as well.
Oak can add vanilla, baking spice, toasted coconut, dried fruit, caramel, and a silkier texture. It can also overwhelm agave if the barrel is too active or the aging goes too far. A memorable aged tequila should still give you a sense of the plant beneath the wood. When it does, the result feels layered rather than simply sweet.
