Milling, Water, and Fermentation Build Complexity

After cooking, the softened agave must be crushed or milled to release its sugary juices. The old-world image is the tahona: a heavy volcanic stone wheel pulled around a circular mill. It crushes agave slowly and often includes some fiber in the fermentation, contributing body and earthy, vegetal depth.

Modern roller mills are faster and more common, particularly in tequila production. They can produce beautifully clean, focused results, although the mouthfeel may differ from a fiber-rich tahona fermentation. Some producers combine methods, which is another reminder that labels rarely tell the full story.

The extracted juice, or a mixture of juice and fibers, moves into fermentation vessels. These can be open wooden vats, stone tanks, stainless steel, or plastic containers, depending on the producer and region. Fermentation is less visible than a roaring pit oven, yet it is one of the most expressive stages. Then ask what production choice may be behind the sensation. Roasted notes can point to pit cooking. A broad, savory texture may reflect fermentation with fibers or a clay still. Aging adds another dimension, especially in reposado and añejo tequila, where oak can bring vanilla, baking spice, caramel, and dried fruit. But barrel character should not obscure the agave.
